![]() The distillate has a fairly fruity and pungent smell and I'm hopeful it will age well with the toasted cherry(two sticks). I find charred seems to work slower and gives off a very different flavour, the toasted brings out vanilla really strong in oak and honey type notes.Īnd after heads were mostly gone I was able to recover 3200ml down to around 65%ABV where I was sure there was some nasty smelling tails coming over. This is for a bundle of maybe 20 sticks split with a tomyhawk to about 1/2" -3/4" a side and about six inches long. I toast at 390 F for 2 hours then whack em up to 430 for 20 mins or so. Wasn't sure if this would allow too much oxygen. I decided to pull the bottle caps and replace with cotton balls to allow for breathing. I wasn't sure what to do concerning these two batches. About 6-8 months ago I was faced with having to put much of my 'stuff' in storage. After 1-1/2 yrs both taste like the original with a hint of oak. Both batches were put into one gallon glass jugs with equal amounts charred oak chips and French oak chips. I didn't have the barrel capacity to age. Two years ago I ran a Nectarine and a Zinfandel in my pot still to produce brandy. I also was intending on toasting some cherry sticks as I don't have white oak at the moment. As I will soon be trying my hand at pot stilling brandy from white wine that was given to me I found this interesting and would appreciate comments as I am hoping to try it.
